Coconut Date Panna Cotta

This is my first sugar free adventure this week. Who can resist creamy panna cotta? Or anything cutely heart-shaped, for that matter? This dessert is super easy to make, only taking about 15 minutes active time. And it’s a perfect little Valentine’s Day treat. This sugar-free, dairy-free, gluten-free thing is gonna be a cinch.


  • 1 cup coconut milk
  • 2 medjool dates, finely diced
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 envelope unflavored gelatin

Medjool dates

Heat the coconut milk on low heat until it comes to a low simmer. Add the dates and cinnamon into the coconut milk and heat for another 5 minutes. Add the vanilla extract and gelatin packet.  Mix the gelatin until completely dissolved, which might take up to 5 minutes. Pour into 1/4 cup molds. Make sure you have the same amount of dates in each mold.


Heart molds before cooling

Place the molds onto a tray and put it into the fridge.  Allow it to cool for 3 hours. This recipe should make 4 hearts.
