Baked goods in the morning can be an incredible treat, but seem so daunting to make. After many savory breakfasts full of green vegetables and eggs, it’s nice to have something to dip into my tea. In Seattle, I could just walk down the block and buy a gluten-free treat. But here, I get to be a little more creative, and have everything piping hot and fresh! These muffins only take 20 minutes total time to make. Yet, quality is not sacrificed for convenience here. For being gluten-free, you’d never know it. They are soft in the middle, crunchy on top, and a great vehicle for jam or apple butter!
There is one half of all breakfast foods that accompany coffee or tea superbly. They are by and far most appealing to the sweet tooth. But who says you have to forego all the pleasures of breakfast foods when you give up sugar? Not me! We’ve all heard the saw “breakfast is the most important meal of the day.” If you like a high protein meal, this is the time of day to have it. Proteins even out sugar levels after consumption versus a meal high in only sugars. A meal high in sugars causes your body to store sugars quickly, which explains the characteristic crash about 30 minutes after consumption.
